Ingredients
- 4 salmon fillets (about 180 g each)
- 2 cm ginger
- 2 tbsp Lime juice
- 4 tbsp olive oil
- 8 tomatoes
- 2 Garlic cloves
- 2 sprigs Rosemary
- 1 splash dry white wine
- Salt
- Pepper (freshly ground)

Rinse the salmon and pat it dry. Peel and finely chop the ginger. Mix with lime juice and 2 tablespoons of oil. Drizzle the mixture over the salmon and let marinate.

Parboil the tomatoes, shock them in cold water, peel, quarter, seed, and dice them small. Peel and finely chop the garlic. In a hot wok, briefly sauté the rosemary in the remaining oil. Add the tomatoes, deglaze with wine, season with salt and pepper, place the salmon on top, cover, and cook for about 6 minutes.
