Ingredients
- 4 salmon fillets (about 200 g each)
- 3 Tbsp plant oil
- Salt
- Pepper
- 400 g baby spinach
- cold-pressed olive oil
- 1 large lemon (juice)
- 2 halved organic limes
Instructions

Season the salmon with salt and pepper. Heat oil in a pan and cook the salmon fillets for about 3–4 minutes per side.

Wash and dry the spinach. Whisk together 5 tbsp olive oil, lemon juice, salt, and pepper with an immersion blender. Add to the spinach and mix well. Taste again. Plate the salmon on top of the spinach salad. Serve each plate with a lime half or drizzle additional lime juice over the salmon. Serve immediately.
