Salmon with Oven Potatoes

Ingredients
- 4 salmon fillets
- 1 tbsp flour
- 2 tbsp lemon juice
- Salt
- freshly ground pepper
- 2 tbsp oil
- 1 tbsp chopped red shallots
- 4 tbsp mixed peppercorns
- 100 ml aged balsamic vinegar
- 1 tbsp sugar
- 2 tbsp butter
- oven potato
- 6 small potatoes
- Sea salt
- freshly ground pepper
- oil
- 1 piece horseradish (about 3 cm)
Instructions

Wash the potatoes, drain and cut into wedges. Drizzle a baking sheet with oil, spread the potato wedges on it, season with sea salt and pepper, optionally drizzle a little more oil over them. Bake at 200°C for 20 minutes until cooked.

For the sauce, sauté the chopped shallots in a bit of oil, add sugar and caramelize. Add peppercorns to the pot, deglaze with balsamic vinegar, reduce for about 10 minutes and keep warm.

Wash the fillets, pat dry, season with lemon juice. Salt, pepper and coat in flour. Heat oil in a pan and sear salmon fillets on both sides until crisp. Briefly broil the fillet slices in the oven. Grate horseradish finely. On warmed plates create a sauce base, place the grilled salmon on top and arrange the oven potatoes. Garnish salmon fillets with some grated horseradish and pepper sauce.
