Ingredients

  • 4 salmon fillets (160 g each)
  • 2 tbsp oil
  • tomato relish
  • 500 g tomatoes
  • 2 onions
  • 1 tbsp sugar
  • 3 Garlic cloves
  • 1 chili pepper
  • 4 tbsp oil
  • 0.125 l meat broth
  • 2 tbsp vinegar
  • Salt
  • pepper (ground)

Instructions

    Boil tomatoes hot, cool, peel, halve, seed and finely dice. Peel and finely chop onions and garlic. Finely chop herbs. Wash, halve, deseed and finely dice chili pepper. Sauté onions, chili, sugar and garlic in hot oil, add tomatoes and simmer. Then pour in meat broth and vinegar. Simmer until sauce thickens, season with salt and pepper. Let cool.

    Wash salmon fillets, pat dry, season with salt and pepper, drizzle with olive oil. Grill or cook on a grill pan for about 3-4 minutes per side.
