Salmon with Sugar Snap Peas

Ingredients
- 250 g salmon fillet (2 fillets; with skin)
- Salt
- Pepper
- 1 bunch spring onions
- 200 g Sugar snap peas
- 2 tbsp olive oil
- 1 tbsp honey
- 3 tbsp Soy sauce
Instructions

Season the salmon fillets with salt and pepper. Wash, trim, and slice the spring onions into rings.

Wash and trim the sugar snap peas, then blanch them in boiling salted water for 2–4 minutes. Drain and set aside.

Meanwhile, heat 1 tablespoon of olive oil in a pan. Sauté the spring onions over medium heat for 2–3 minutes. Add honey, let it caramelize for about 2 minutes, then deglaze with soy sauce.

Heat the remaining oil in another pan. Cook the salmon fillets over medium heat, browning each side for about 4 minutes until cooked through.

Plate the salmon fillets with spring onions and sugar snap peas on two plates.
