Ingredients
- 1 rosemary sprig
- 2 parsley sprigs
- 2 thyme sprigs
- 4 Garlic cloves
- 0.5 lemon zest
- 1 tbsp coriander seeds
- Salt
- black pepper (freshly ground)
- 250 ml fermented milk (Amasi)
- 1 chicken (pre‑cooked, 1.4 kg)
- olive oil (for the pan)
Instructions

Wash the herbs, shake dry, strip leaves or needles and chop finely.

Peel the garlic and press through a press.

Mix the herbs, lemon zest and garlic into the Amasi.

Crush the coriander seeds in a mortar and stir them in as well.

Season with salt and pepper.

Wash the chicken, pat dry and cut into 8 pieces.

Combine the chicken with the marinate in a large dish, cover with foil and refrigerate for about 2 hours.

Preheat the oven to 180°C (350°F) fan‑forced.

Place the chicken parts in a greased baking tin and roast for about 45 minutes until golden brown.

Serve garnished with fresh rosemary.
