Onion Roast Beef

Ingredients
- 4 slices Roast Beef (about 180 g each)
- Salt
- Pepper (freshly ground)
- 1 tbsp flour
- 2 tbsp oil
- 5 onions
- 2 tbsp clarified butter
- 125 ml Vegetable broth
- 1 tbsp soy sauce
- 50 ml Heavy Cream (at least 30% fat)
- parsley for garnish

Preheat the oven to 80°C (Oven + fan). Wash and pat dry the beef, season with salt and pepper, then dust with flour. In a large pan, sear each side of the beef in 1 tbsp oil for 2‑3 minutes (or longer/shorter as desired), wrap in foil, and keep warm in the oven.

Peel the onions; cut three into thin rings and two into thick rings. Sauté the thin onion rings in 1 tbsp oil and 1 tbsp clarified butter until fragrant. Add vegetable broth and soy sauce, reduce slightly, then strain through a sieve. Stir in cream and season with salt and pepper to taste.

Sear the thick onion rings in the remaining clarified butter until golden brown. Arrange the roast beef slices on plates, stir the reserved meat juices into the sauce, adjust seasoning, pour over the beef, and garnish with roasted onions and parsley before serving.
