Salmon with Strawberry Ragout
The delicious salmon with strawberry ragout from Spoonsparrow is a successful contrast of fruity and savory flavors.
Ingredients
- 300 g Strawberries
- 60 g red shallots (2 red shallots)
- 1 Green Chili Pepper
- 20 g basil (1 bunch)
- 4 coriander stems
- 2 limes (juice)
- 2 tbsp honey
- 2 tbsp olive oil
- Salt
- Pepper
- 500 g salmon fillet with skin (4 fillets)

Clean, wash and finely chop the strawberries. Peel the shallots and slice into thin rings. Halve the chili peppers lengthwise, remove seeds, wash and cut into thin rings.

Wash herbs, pat dry and pluck leaves; finely chop half of them. Mix strawberries with shallots, chopped herbs, chili rings, lime juice, honey, 1 tbsp olive oil, salt, and pepper, then let sit for 20 minutes.

Meanwhile, rinse salmon fillets and pat dry. Heat remaining oil in a pan. Cook the salmon fillets skin-side down first, then flip, each side for 6–8 minutes over medium heat. Season with salt and pepper. Plate the salmon with strawberry ragout and sprinkle with remaining herbs.
