Ingredients

  • 1 salmon side (ca. 600 g)
  • Salt
  • Pepper (freshly ground)
  • 1 untreated orange
  • 4 stalks lemon thyme
  • 400 g firm boiling potatoes
  • 2 handfuls watercress (ca. 30 g)
  • 2 handfuls parsley (ca. 30 g)
  • 400 ml Vegetable broth
  • 1 Shallot
  • 20 g butter
  • 100 ml dry white wine
  • 20 g grated Parmesan

Instructions

    Preheat the oven to 160°C with top and bottom heat.

    Wash the salmon side, pat dry, place skin-side down on a parchment-lined baking sheet and season with salt and pepper. Rinse the orange hot, slice thinly and arrange over the fish. Wash the thyme, pat dry and spread over the salmon as well. Bake in the preheated oven for about 25 minutes.

    Meanwhile peel, wash and dice the potatoes into small cubes. Wash the watercress and parsley, shake dry, pluck the leaves and blend with 4 tbsp vegetable broth to a fine puree. Dice the shallot finely and sauté with the potato cubes in a hot pan with melted butter until golden brown. Deglaze with wine and remaining broth, season with salt and pepper, and simmer for about 10 minutes. Finally mix the herb puree and parmesan into the potatoes and spoon into small bowls. Arrange the salmon on a plate and serve with the parsley potatoes.
