Ingredients

  • 600 g salmon fillet (1 salmon fillet)
  • 1 tbsp Olive Oil
  • 100 ml White wine
  • 400 g mixed canned vegetables of choice (bell pepper, tomato, etc.)
  • 400 g small peeled potatoes
  • 1 tbsp curry powder
  • Salt
  • freshly ground pepper

  • lemons
  • 2 tbsp chopped basil

Instructions

    Wash salmon fillet, pat dry, brush with olive oil, season with curry, salt and pepper.

    Arrange drained vegetables and potatoes on a large double sheet of foil, season with salt and pepper. Fold the foil up to create a bed for the salmon. Place salmon on top, pour white wine over it, and seal the foil well.

    Bake in preheated oven at 140°C fan-forced for about 30 minutes.

    Before serving, sprinkle with lemon zest and basil.
