Ingredients
- 300 g Puy lentils
- 600 ml Vegetable Broth
- 2 tbsp Apple cider vinegar
- 2 tbsp lemon juice
- 4 Tbsp sunflower oil
- 1 pinch sugar
- Salt
- Pepper
- 300 g smoked salmon (in pieces)

Instructions

Wash the lentils and drain them. Bring the broth to a boil and let the lentils simmer gently for about 20 minutes.

For the dressing whisk together vinegar, lemon juice, oil, sugar, salt, and pepper; taste and adjust. Stir in the cooked, drained lentils if needed and allow to cool slightly.

Dice the salmon, arrange it over the lentil salad, and serve garnished with cleaned field salad.
