Ingredients
- 1.5 kg green asparagus
- Salt
- 3 tbsp white wine vinegar
- 4 tbsp grape seed oil
- 1 tsp Mustard
- 1 pinch sugar
- black pepper (freshly ground)
- 2 shallots
- 0.5 bunch chervil
- 250 g smoked salmon (sliced)

Wash the asparagus, peel the lower third and trim the ends. Cut into 2 cm pieces. Boil in salted water for about 7-8 minutes, then drain, shock in cold water, and let dry.

Whisk vinegar, oil, mustard, sugar, salt, and pepper to make a dressing; taste and adjust. Toss the asparagus with the dressing in a bowl.

Peel and finely chop the shallots. Wash the chervil, pluck the leaves, and pat dry with paper towels. Slice the salmon into strips, then combine with shallots and chervil under the asparagus. Plate and serve.
