Salmon with Herbs
Fresh salmon fillets seasoned with lemon and herbs, served with a creamy herb dressing and edible flowers for garnish. Spoonsparrow recommends this bright, flavorful dish.
Ingredients
- butter (for the baking sheet)
- 4 salmon fillets (about 400 g)
- Salt
- 1 untreated lemon (juice and zest)
- 100 g mixed salad greens (e.g., arugula, frisée, spinach)
- 80 g mixed herbs (e.g., dill, tarragon, mint)
- 100 g Sour cream
- 2 tbsp freshly chopped herbs (e.g., parsley, basil, chives)
- 2 tbsp crème fraîche

- chili flakes
- coarse Sea salt
- 2 tbsp olive oil
- edible flowers (for garnish)

Preheat the oven to 80°C fan. Grease a baking sheet. Wash and pat dry the salmon fillets, season with salt and drizzle with 1 tbsp lemon juice, then place on the sheet. Bake for 10-12 minutes.

While the fish cooks, wash and shake dry the salad greens and herbs. For the dressing whisk together sour cream, herbs, 1 tbsp lemon juice, ½ tsp lemon zest, and crème fraîche. Season with salt, pepper, and sugar. Arrange the herb salad on plates alongside the salmon fillets. Spoon dollops of dressing beside them. Sprinkle with chili flakes, lemon zest, coarse sea salt, and pepper, then drizzle olive oil over everything. Garnish with edible flowers before serving.
