Ingredients
- 2 salmon fillets (150 g each)
- 250 g Chinese egg noodles
- 4 tbsp finely chopped coriander leaves
- Salt
- ground pepper
- sesame oil
- juice of one lime
- lime wedges

Heat 3 tbsp oil in a pan and sear the salmon fillets over high heat on both sides. Season with salt and pepper. Wrap in foil and let rest in a warm oven (100°C) for 15 minutes.

Cook noodles according to package instructions. Drain and toss with lime juice, 3 tbsp oil, coriander, salt, and pepper.

Plate the noodles with the salmon fillet, drizzle additional lime juice over the fish, and serve immediately.
