Salmon with Cucumbers

Ingredients

  • 1 cucumber
  • 4 tbsp olive oil
  • 0.5 tsp mustard
  • 2 tbsp white wine vinegar
  • 6 tbsp orange juice
  • salt (pepper)
  • 500 g salmon fillet
  • 2 tbsp lemon juice
  • 1 bunch dill
  • 1 bunch parsley

Instructions

    Wash the cucumber, halve it and remove the seeds with a spoon. Dice the flesh finely.

    Whisk olive oil with mustard, vinegar and orange juice. Season with salt and pepper.

  3. 3.

    Add the cucumber cubes to the dressing. Finely chop the salmon fillet and mix in a bowl with lemon juice, salt and pepper.

    Wash dill and parsley and arrange the sprigs star-shaped on plates.

    Spoon a dollop of salmon tartare into the herb center and drizzle with cucumber dressing.
