Salmon with Green Asparagus and Beans
The salmon with green asparagus and beans from Spoonsparrow brings plenty of protein to the plate!
Ingredients
- 750 g green asparagus
- 250 g large white beans (canned; drained weight)
- 1 Garlic clove
- 500 g salmon fillet (with skin; 4 fillets)
- Salt
- Pepper
- 6 tbsp Olive oil
- 100 g seafood (frozen; thawed)
- 50 ml Apple Juice
- Cayenne pepper
- 10 g coriander (0.5 bunch)
Instructions

Wash asparagus, trim woody ends and peel the lower third of the stalks. Drain beans in a sieve, rinse and let drain. Peel garlic and finely dice. Pat salmon fillets dry, season with salt and pepper.

Heat 2 tbsp oil in a pan. Steam asparagus covered for 5–10 minutes over medium heat. Season with salt and pepper and keep warm.

In another pan, heat 2 tbsp oil. Sauté garlic for 2 minutes over medium heat. Add seafood and stir-fry for 5 minutes. Deglaze with juice. Add beans and cook 2–4 minutes until liquid has mostly evaporated. Season mixture with salt, pepper and cayenne pepper.

Heat remaining oil in a pan. Fry salmon fillets skin-side down for 3 minutes over medium heat. Flip and fry the other side for another 1–2 minutes.

Remove skin from salmon fillets and arrange on plates. Place asparagus beside them and spoon seafood-bean mixture over the fish. Wash coriander, pat dry, tear leaves and garnish everything with it.
