Ingredients
- 250 g fresh baby spinach
- 300 g fresh salmon
- 1 Shallot
- 1 EL capers (jar)
- 2 EL grape seed oil
- Salt
- pepper (from grinder)
- Lemon juice
- 1 handful onion sprouts
- 4 EL Keta caviar

Wash the spinach, rinse, clean and spin dry.

Wash the salmon, pat dry and cut into very small cubes. Peel the shallot and finely chop it. Mix with capers, salmon and grape seed oil and season with salt, pepper and lemon juice.

Distribute the salad with sprouts on a plate. Arrange the tartare loosely on top and serve sprinkled with salmon caviar. Offer a light lemon vinaigrette if desired.
