Salmon Egg Salad

Ingredients

  • 5 hard boiled eggs
  • 1 Shallot
  • 4 Tbsp mayonnaise
  • Salt
  • Pepper (freshly ground)
  • 1 tbsp Lemon Juice
  • 100 g young spinach leaves
  • 300 g smoked salmon
  • basil (for garnish)
  • lemon (for garnish)

Instructions

    Peel the eggs. Separate whites and yolks, then roughly chop the whites. Peel and finely dice the shallot.

    Mix the yolk with the diced shallot and mayonnaise. Season with salt, pepper, and lemon juice; stir well. Rinse the spinach leaves, wash them thoroughly, dry, and arrange on four fresh food containers or a large plate.

    Place the egg salad and smoked salmon slices on top, then garnish with basil leaves and lemon wedges. Serve with white bread.
