Ingredients
- 2 small red onions
- 1 untreated lemon
- Chives
- 250 g smoked salmon (fillet)
- 2 tbsp olive oil
- 2 tbsp white wine vinegar
- 1 tsp Dijon mustard
- Salt
- white pepper
- 2 tbsp pickled green peppercorns
- 80 g Butter
- 12 small round pumpernickel slices

Peel and finely dice the onions. Wash the lemon hot and cut thin strips of zest. Dice the smoked salmon very finely. Add onions, lemon zest, and chives. Whisk together oil, vinegar, and mustard. Season with salt and pepper. Mix in the salmon and combine well. Let chill in the refrigerator for about 30 minutes.

Drain the green peppercorns on kitchen paper. Crush them in a mortar. Add to butter and knead. Brush pumpernickel slices with this mixture. Spread the salmon tartare on top and serve.
