- 4 salmon fillets (about 180 g each)
- 2 untreated lemons
- Salt
- Pepper (freshly ground)
- 2 tbsp olive oil
- 1 tbsp honey
- 150 ml dry white wine

- 1 tsp Capers
- 1 tbsp green peppercorns (pickled)

Wash and pat the salmon dry. Slice one lemon thin for garnish, juice the other. Season the salmon with salt and pepper and sear in hot oil in a non-stick pan on both sides. Drizzle honey over it and deglaze with lemon juice and white wine. Add rosemary, capers, and green peppercorns, remove from heat, and let simmer for 4-5 minutes while turning the salmon once; season sauce with salt.
