Salmon Steak with Vegetables

Ingredients
- 4 salmon steaks (200 g each)
- 2 tbsp lemon juice
- 1 tsp flour
- 20 g butter
- Salt
- Pepper
- 400 g small potatoes
- 20 g butter
- 3 tbsp finely chopped parsley
- Salt
- 1 kg savoy cabbage head
- 30 g Butter
- Salt
- freshly ground pepper
- 2 tbsp chopped walnuts
- 2 tbsp chopped parsley
Instructions

Remove the outer leaves of the savoy cabbage, quarter lengthwise, cut out the core and slice crosswise into strips. Sauté the cabbage in hot butter, season.

Peel and wash the potatoes, boil them in salted water for about 25 minutes until tender. Rinse the salmon, pat dry, drizzle with lemon juice and season with salt and pepper. Dust lightly with flour and fry each side in butter for 2–3 minutes until golden yellow.

Melt the butter. Drain the potatoes, let them steam off, toss them in butter, season with salt and sprinkle parsley.

Plate the salmon on a preheated dish alongside the parsley potatoes and savoy cabbage. Garnish with chopped walnuts and parsley.
