Ingredients

  • 400 g small potatoes
  • 150 g sugar snap peas
  • 200 g Cherry tomatoes
  • 1 bunch Basil
  • 1 red chili pepper
  • 2 tbsp white wine vinegar
  • 6 tbsp Olive oil
  • Salt
  • ground pepper
  • 2 pieces salmon fillet (about 160 g each)

Instructions

    Wash the potatoes thoroughly and cook in salted water for about 30 minutes, then drain, let steam off, and halve them.

    Trim the sugar snap peas and blanch in boiling salted water for 4 minutes, then drain. Wash and halve the tomatoes. Peel and roughly chop the garlic. Wash the chili pepper, deseed, and finely chop it. Wash the basil, shake dry, and blend with garlic, chili, vinegar, and oil. Season with salt and pepper.

    Mix the vegetables with the herb dressing and let sit for a few minutes.

    Brush the salmon with a little oil, season with salt and pepper, and grill over medium heat for about 2-3 minutes per side until cooked through.
