Salmon on Swiss Chard
Try the delicious salmon with swiss chard from Spoonsparrow.
Ingredients
- 500 g salmon fillet
- 800 g swiss chard (2 stalks)
- Salt
- 2 Garlic cloves
- 1 orange
- 2 Spring Onions
- 20 g ginger (1 piece)
- 5 tbsp olive oil
- 1 tsp powdered sugar
- chili flakes
- 2 tbsp lemon juice
- 120 ml dry white wine
Instructions

Rinse salmon fillets under cold water, pat dry and cut into 4 equal pieces.

Wash, trim, and blanch swiss chard in boiling salted water for 2 minutes. Drain, shock with cold water, let drain well and slice into wide strips. Peel garlic and slice thinly.

Peel orange, removing the white skin, cut fruit segments between membranes, catching juice and squeezing remaining pulp.

Wash, trim spring onions and cut into rings. Peel ginger and cut into fine strips.

Heat 1 tbsp oil in a pan. Sauté spring onions and ginger over medium heat for 2 minutes. Add orange segments, sprinkle with sugar, stir in 1–2 tbsp orange juice, season with salt and chili flakes, and simmer for 2 minutes. Remove from heat and cool.

Meanwhile, season fish with salt and pepper, drizzle with lemon juice. Heat 2 tbsp oil in another pan. Cook salmon over medium heat for about 5 minutes on each side until golden brown.

Heat remaining oil in a third pan. Sauté garlic until translucent. Add swiss chard, deglaze with wine, season with salt and pepper, and simmer for 2–3 minutes.

Arrange the swiss chard on a plate, place salmon on top, and drizzle with orange salsa.
