Salmon Fillet with Spinach

Ingredients
- 2 pieces salmon fillet (about 180 g each, skinless and boneless)
- 1 large lemon
- Salt
- Pepper (freshly ground)
- 3 tbsp butter
- 400 g spinach
- 4 Tbsp breadcrumbs
- 1 tbsp mixed chopped herbs (e.g., parsley, dill…)
Instructions

Wash, trim, and blanch the spinach in lightly boiling salted water until wilted; drain, shock in cold water, and let dry. Reserve about 1 tbsp of spinach to finely chop.

Halve the lemon and juice one half. Peel the other half and slice thinly. Grate zest from one lemon half.

Squeeze a little water out of the spinach, fluff it again, and sauté in 1 tbsp hot butter with the lemon slices until liquid evaporates; season with salt, pepper, and a splash of lemon juice. Keep warm.

If needed, split salmon fillets further, drizzle with lemon juice, and season with salt and pepper.

Pan‑fry salmon fillets in 1 tbsp hot butter in a nonstick pan for about 2 minutes per side. Remove and place in a baking dish. Preheat the oven grill.

Melt remaining butter in a small pan, add breadcrumbs, lemon zest, chopped spinach, and herbs; mix well and season with salt and pepper. Spread this topping over the salmon fillets and broil until golden brown for a few minutes.

Serve by arranging spinach with lemon slices on warmed plates and placing the broiled salmon fillets on top.
