Salmon Fillet with Mustard Seeds and Vegetables

Ingredients

  • 4 salmon fillets (about 150 g each)
  • 4 tbsp mustard seeds (jar)
  • Sea salt
  • freshly ground pepper
  • Lemon balm
  • olive oil
  • 2 Zucchini
  • 800 g small new potatoes

Instructions

    Preheat the oven to 200°C with upper and lower heat. Wash the salmon fillets, pat dry and place on a greased baking tray. Spoon 1 tbsp of chopped mustard seeds onto each fillet, season lightly with salt and pepper, and sprinkle with lemon balm. Drizzle a few drops of olive oil over them and bake in the preheated oven for 10-12 minutes. Wash the zucchini, trim, and cut into sticks about 6 cm long.

    Wash the potatoes, halve them and boil in salted water for about 15 minutes until tender. Add the zucchini sticks and cook briefly with them. Remove from the water with a slotted spoon and toss in hot olive oil in a pan. Season with salt and serve on preheated plates. Place the salmon fillets on top and serve immediately.
