Shrimp with Paprika

Ingredients
- 12 large shrimp (deveined; peeled except tail segment)
- 2 red bell peppers
- 2 yellow bell peppers
- 2 red onions
- 2 Garlic cloves
- 5 tbsp olive oil
- Sea salt
- 60 g black olives
- 40 g capers (2 tbsp)
- sumac
- Cayenne pepper
- 4 sprigs thyme
Instructions

Rinse shrimp under cold water and pat dry. Wash bell peppers, halve them, remove seeds, and cut into strips.

Peel onions, halve them, and slice into strips. Peel garlic cloves and slice thinly.

Heat 1 tbsp olive oil in a pan over medium heat. Sauté garlic, onions, and peppers for 3 minutes. Season with salt and remove from heat.

Place four rectangular sheets of parchment paper side by side. In the center of each sheet place 1/4 of the vegetables, then distribute olives and capers on top. Lay three shrimp on each piece, season with sea salt, sumac, and cayenne pepper. Drizzle remaining oil over them. Wash thyme, shake dry, chop leaves, and sprinkle over the shrimp. Fold parchment paper over and seal tightly.

Place parcels on a baking tray and bake in preheated oven at 225 °C (fan 200 °C; gas: level 3–4) for about 15 minutes.
