- 1 kg fresh sardines
- Salt
- Pepper (freshly ground)
- 1 vegetable onion
- 2 Garlic cloves
- 500 g ripe tomatoes
- 1 bunch parsley (≈30 g)
- 2 tbsp olive oil
- 0.5 tsp Fennel seeds

Trim the heads off the sardines, remove the middle spines, and rinse the fillets under cold water. Season with salt and pepper. Peel the onion and garlic; finely chop the garlic and slice the onion into strips. Wash the tomatoes, blanch them briefly, cool, peel, quarter, deseed, and dice. Rinse the parsley, shake dry, pluck the leaves, and finely chop.

Heat the oil in a pan and quickly sauté the onion with the garlic and fennel seeds. Add the sardines and sear briefly. Sprinkle the tomato cubes and parsley over them, cover, and cook on medium heat for 10 minutes. Season the fish again with salt and pepper, plate it with the tomato-onion mixture, and serve alongside crispy rosemary roasted potatoes.
