- 700 g salmon fillet (ready-to-cook, skin on, whole piece)
- 4 sprigs Mint
- 2 Garlic cloves
- 0.5 untreated lemon (juice)
- 3 tbsp olive oil
- 1 tsp crushed Sichuan peppercorns
- Salt

Soak the wooden board in cold water for at least 1 hour. Wash the salmon and pat dry, then place skin side down on a plate. Rinse the mint, shake dry, and pluck the leaves. Peel the garlic, slice thinly, and mix with mint, oil, lemon juice, salt, and pepper; spread over the salmon. Let sit briefly.

Preheat the grill and place the soaked wood on the hot grate until it starts smoking after 4-5 minutes. Place the salmon on the wood and cook covered for about 20 minutes, so that the center remains slightly translucent pink.
