Salmon Fillet in Foil with Tomatoes

Ingredients

  • 120 g cherry tomatoes
  • 1 Organic lemon
  • 8 small shallots
  • 4 Garlic cloves
  • 1 red chili pepper
  • 2 sprigs Rosemary
  • 6 tsp olive oil
  • 600 g salmon fillets (4 pieces)
  • Salt
  • Pepper
  • 8 capers in a jar
  • 4 sheets of aluminum foil

Instructions

    Wash and drain the tomatoes. Rinse the lemon under hot water, pat dry, and slice into rounds.

    Peel the shallots, leave whole or halve them depending on size. Peel the garlic cloves. Wash the chili pepper, deseed, and cut into thin rings. Wash the rosemary and shake off excess moisture.

    Brush each sheet of foil with ½ tsp oil, place one salmon fillet on each, season with salt and pepper.

    Top each packet with a few lemon slices, 2 capers, some cherry tomatoes, shallots, chili rings, one garlic clove, and one rosemary sprig. Lightly season with salt and pepper, drizzle with 1 tsp olive oil, and carefully seal the foil. Grill on a preheated grill for about 20 minutes.
