Salmon cucumber salad: For those who focus on protein, low carbohydrates and calorie-conscious eating, this is the salad for you. Eggs and salmon provide vitamin D.

Ingredients

  • 2 Eggs
  • 250 g cucumber (0.5 cucumber)
  • 6 Radishes
  • 0.5 bunch dill
  • 2 tbsp light balsamic vinegar
  • 2 tbsp olive oil
  • 30 g yogurt (1.5% fat) (2 tbsp)
  • 1 tsp Mustard
  • Salt
  • Pepper
  • 80 g smoked salmon (4 slices)

Instructions

    Peel the eggs and cook them for about 7 minutes until soft-boiled. Rinse cold, peel, and let cool.

    While the eggs are cooking, wash the cucumber and radishes, dry them, and shave thin slices with a vegetable peeler.

    Wash the dill, shake off excess water, pluck the leaves, and finely chop.

    Whisk vinegar, oil, yogurt, mustard, salt, pepper, and dill in a bowl to make a sauce.

    Slice the eggs. Arrange radishes, cucumber, and two slices of salmon on plates with egg slices. Drizzle with sauce and serve.
