Salmon Cubes with Radish Salad

Ingredients

  • 2 bunches radishes
  • juice of 1 lemon
  • 1 tbsp fruit vinegar
  • 3 tbsp olive oil
  • a pinch sugar
  • Salt
  • pepper (ground)
  • 500 g salmon fillet (skinless)
  • butter
  • 10 g red caviar (from salmon or sea roe)

Instructions

    Wash, dry, and grate the radishes.

  2. 2.

    Whisk together lemon juice, vinegar, sugar, a touch of salt and pepper, then fold in the oil. Toss the radishes with this dressing.

    Season the salmon with salt and pepper and sear each side in hot butter for about 3–4 minutes. Cut into cubes before serving.

    Arrange the radish salad on plates and top with the salmon cubes, garnishing with caviar.
