Pasta with Salmon

Ingredients
- 350 g Pappardelle
- 500 g salmon fillet (skinless)
- 3 tbsp butter
- Salt
- pepper (ground)
- 2 thin stalks leeks
- 1 tsp seasoned broth
- 100 ml dry white wine
- 200 g heavy cream
- 1 tbsp Lemon Juice
- 1 tbsp chopped dill sprigs

Wash, trim, and cut the leek into 10 cm long strips. Sauté in 1 tbsp hot butter, add a splash of water, sprinkle with broth, season with salt and pepper, cover and steam for about 5 minutes. Remove leeks and keep warm.

Stir cream and wine into the cooking liquid, reduce by about one-third quickly, then season with lemon juice, salt, and pepper; finally fold in dill.

Cut salmon into four portions, remove any remaining pin bones if present. Season with salt and pepper and sear each side in 1 tbsp hot butter for about 3 minutes.

Meanwhile cook pasta in plenty of boiling salted water until al dente.

Plate salmon, pasta, and sauce on preheated plates.
