Ingredients

  • 1 kitchen-ready sea bass (about 600-700 g)
  • parsley
  • thyme
  • 2 kg coarse sea salt
  • Pepper
  • 3 lemon slices

Instructions

    Wash the fish, pat dry and rub pepper inside and out. Wash parsley and place it with the lemon slices in the cavity. Preheat oven to 200 °C. Spread half of the salt on a suitable oval baking dish, sprinkle some thyme, set the fish on top and cover with the remaining salt.

    Bake in the preheated oven for about 30-35 minutes. Serve the fish in its salt crust.
