Pan‑fried Red Snapper Fillets

Mediterranean inspired dish with red snapper that requires little effort yet tastes superb.
Ingredients
- 1 Organic Lime
- 1 Organic lemon
- 4 sprigs lemon thyme
- 2 tbsp almond slivers
- 720 g red snapper fillet (double fillets 4 red snapper fillets)
- Salt
- Pepper
- 2 tbsp olive oil
- 1 tbsp yogurt butter
- 1 tsp cane sugar
- 1 tbsp pink peppercorns
Instructions

Wash lime and lemon hot, dry, slice into rounds. Wash thyme and shake off excess water.

Toast almond slivers in a small pan without fat over medium heat until golden brown. Rinse fish fillets and pat dry with paper towels. Season with salt and pepper.

Heat olive oil in a large non‑stick skillet. Fry fish fillets skin side down for 2–3 minutes, then flip and cook another minute to finish.
