Mozzarella Zucchini Skewers

These mozzarella zucchini skewers are a tasty and quick low-carb appetizer. The recipe can be found at Spoonsparrow.
Ingredients
- 2 small zucchinis
- 5 tbsp olive oil
- 1 Garlic clove
- Salt
- coarsely ground pepper
- 375 g mozzarella
- 0.5 lemon

Clean and wash the zucchini, then cut each in half crosswise. Slice the halves lengthwise into about 3 mm thick rounds. Heat 2 tbsp of olive oil in a grill pan. Peel and chop the garlic, add it to the oil. Fry the zucchini slices for about 2 minutes, turning once. Season with salt and pepper and drain on kitchen paper.

Drain the mozzarella and cut into pieces. Thread the mozzarella onto skewers alternating with folded zucchini slices.

Arrange the zucchini-mozzarella skewers on a plate. Squeeze lemon juice and mix with the remaining olive oil, season with salt and pepper, then drizzle over the skewers.
