Salmon Bowl with reis-fit Feelgood beans, Chia with Quinoa & Veggies

Spoonsparrow and reis-fit present: Salmon Bowl with reis-fit Feelgood beans, Chia with Quinoa & Veggies – try it fast!

Ingredients

  • 1 handful Swiss chard (50 g; alternatively broccoli florets)
  • 75 g mushrooms (e.g., button, shiitake, oyster)
  • 1 tbsp Olive Oil
  • 1 tbsp chunky oatmeal (15 g)
  • 1 tbsp soy sauce
  • pepper to taste
  • 50 g smoked salmon
  • 4 soft apricots (20 g)
  • 1 pack reis-fit Feelgood (beans, chia with quinoa & veggies)

Instructions

    Clean and wash the Swiss chard, then cut it into diagonal strips. Clean the mushrooms and halve them if necessary. Heat oil in a pan, sauté the chard and mushrooms over medium heat for 5 minutes. Add the oatmeal, season with soy sauce and pepper, remove from the pan and set aside.

    Meanwhile, break the salmon into small flakes and slice the apricots into strips.

    Gently squeeze the reis-fit Feelgood pack to release its contents, tear open the pack, add the contents to the pan and warm with 2 tbsp water over low heat for 2 minutes.

    Fill a bowl with the warmed reis-fit Feelgood mix, then top with the chard-mushroom mixture, salmon flakes, and apricot strips.
