Salmon Bites

Ingredients
- 600 g wild salmon fillet
- 100 g toast bread
- 150 ml coconut milk
- 4 Spring Onions
- 1 EL oil
- 2 egg yolks
- 1 piece fresh ginger (3 cm)
- 1 EL dill (chopped)
- Salt
- Pepper
- 500 ml plant oil
- lemon wedges (for garnish)

Instructions

Rinse the salmon fillet cold, pat dry with kitchen paper and chop finely. Clean and chop the spring onions. Peel and finely chop the ginger. Heat the oil in a pan and briefly sauté the spring onions and ginger. Warm the coconut milk and soak the toast bread in it. Squeeze out excess liquid and mix with the salmon. Combine spring onions, ginger, egg yolks, and dill. Season the mixture with salt and pepper.

With wet hands form 8 patties. Heat the oil in a pot or deep fryer and fry the patties all around until golden yellow in about 3-5 minutes.

Arrange on plates garnished with lemon wedges and dill. Serve with mixed salad.
