Salmon Bagels

Ingredients
- 450 g flour
- 21 g yeast (0.5 cube)
- 1 tbsp sugar
- 125 ml lukewarm milk
- 60 ml oil
- 1 tsp salt
- 1 egg
- 1 Egg white
- sesame seeds
- poppy seeds
- 200 g Cream cheese
- 1 Red Onion
- 1 small chicory
- Salt
- pepper (ground)
- 20 slices smoked salmon

Dissolve yeast in lukewarm milk with 1 tbsp sugar, then mix with flour, oil, salt and egg; knead well with the dough hook of a mixer and cover. Let rise in a warm place for about 30 minutes.

Knead again thoroughly and let rise another 30 minutes.

On a floured surface combine the dough, divide into 10 equal pieces, shape each into a ball, press a hole in the center, widen to about 4 cm, and form into a ring; let rest for about 15 minutes.

Place bagels portion by portion in boiling salted water for about 1 minute, turning once. Remove, drain and place on a parchment-lined baking sheet. Brush with beaten egg white and sprinkle with sesame seeds and poppy seeds as desired. Bake in a preheated oven at 200°C for about 25 minutes until golden brown. Let cool lukewarm.

Cut the bagels open and spread cream cheese on each half.

Peel the onion and slice into thin rings. Split chicory leaves and cut diagonally if needed.

Distribute slightly rolled salmon over the lower halves, top with chicory, then onion rings, season with salt and pepper, and place the upper halves on top.
