Salmon and Egg Sandwich

Ingredients

  • 3 tbsp Skyr
  • 1 tbsp Tomato Paste
  • 3 tbsp Cream cheese
  • 1 tbsp Lemon Juice
  • white pepper
  • Salt
  • 150 g Smoked salmon
  • 4 hard‑boiled eggs
  • 1 Red Onion
  • 1 small cucumber
  • 0.5 bunch Chives
  • 9 slices Tramezzini bread

Instructions

    Whisk the Skyr with tomato paste. Mix the cream cheese with lemon juice and season with white pepper and salt. Slice the smoked salmon into thin strips. Peel the eggs and slice them thinly as well. Peel the onion and dice it finely. Wash the cucumber thoroughly, peel it, then slice or julienne it thinly.

    Wash the chives, shake off excess water, and cut into 1 cm pieces. Assemble the sandwiches: spread one third of the cream cheese mixture on a Tramezzini slice and sprinkle with some onions. Top with one sixth of the salmon and cover with another bread slice. Spread one third of the tomato‑yogurt sauce on this layer, add several egg slices and more salmon.

    Cover with another Tramezzini slice and press lightly. Repeat the same process to make two more sandwiches. Then cut each sandwich into four strips and lay them overlapping with cucumber slices.

    Finally garnish eight strips with chives and the remaining ones with onions. Arrange three sandwich strips per portion on a plate.
