Salt-Free Bread
This salt-free bread is ideal for people with heart conditions, high blood pressure or fluid retention. With spices you will not miss the salt.
Ingredients
- 300 g oat bran
- 0.5 tsp anise
- 0.5 tsp Fennel seeds
- 0.5 tsp Coriander seeds
- 1 pinch fenugreek
- Pepper
- 300 g spelt whole‑grain flour (+2 tbsp for handling)
- 100 g ground flaxseed
- 1 packet dry yeast
- 50 ml olive oil (or other flavorful oil)
Instructions

Stir oat bran with 300 ml lukewarm water and let it soak for about 50 minutes.

Meanwhile, crush cumin, anise, fennel and coriander seeds in a mortar, then mix in fenugreek and pepper.

Combine the soaked oat bran with the liquid, spelt flour, flaxseed, yeast, 150 ml lukewarm water, spice mixture and oil to knead into an elastic dough. Cover and let rise for about 1 hour.

Knead the dough again on a floured surface, shape it and place it in a loaf pan. Let it rise for another 30 minutes.

Bake the salt‑free loaf in a preheated oven at 200 °C (convection 180 °C: gas level 3) for about 50–60 minutes. At the start put two ice cubes on the bottom of the oven.
