Salami Pizza with Arugula

Ingredients
- 450 g flour
- 1 packet dry yeast
- 200 ml lukewarm water
- 1 pinch salt
- 3 tbsp olive oil
- 1 can diced tomatoes (420 g net weight)
- tomato paste
- Salt
- pepper (ground)
- 100 g Parmesan (freshly grated)
- 10 tbsp olive oil
- 1 bundle arugula
- 60 g salami (thin slices)
- 3 tbsp balsamic vinegar
- 30 g parmesan (whole block)
Instructions

Mix flour with dry yeast in a mixing bowl, add salt, olive oil and water, and knead thoroughly with the dough hooks of an electric mixer into a smooth dough until it releases from the bowl edges; if needed add 1-2 tbsp water. Cover and let rise in a warm place for about 45 minutes.

Cook tomatoes and tomato paste for 3 minutes, season with salt and pepper, then let cool.

Knead the dough again on a floured surface, divide into two parts, roll each into thin circles, and place on two oiled baking trays.

Brush pizza bases with 2 tbsp oil and spread the tomato mixture over them. Top with salami slices and grated cheese, then drizzle with 2-3 tbsp oil.

Bake in a preheated oven at 250°C one after another for about 12-15 minutes (or together at 220°C using fan).

Wash arugula, shake dry, remove thick stems, and cut leaves into bite-sized pieces. Heat remaining oil in a pan, deglaze with balsamic vinegar, toss the arugula briefly, then remove from heat and season with salt, pepper and sugar.

Distribute the leaves over the hot pizzas and sprinkle with parmesan shavings (cut with a paring knife). Serve.
