Ingredients

  • 600 g Chicken breast fillet (4 chicken breast fillets)
  • Salt
  • freshly ground pepper
  • 1 Organic lemon
  • 4 sage stems
  • kitchen twine
  • 2 tbsp oil
  • 200 ml chicken broth
  • 150 g crème fraîche
  • 2 tbsp finely chopped herbs (parsley, chervil, basil)
  • 1 tbsp light sauce thickener
  • 1 bunch carrots
  • 100 g Sugar snap peas
  • Salt
  • a few lemon balm leaves

Instructions

    Season the chicken breast fillets with salt and pepper. Rinse the lemon and slice it. Pull sage leaves from the stems. Place lemon slices and sage leaves on the chicken breast fillets and tie them securely with kitchen twine.

    Heat oil in a non‑stick pan. Brown the chicken breast fillets on both sides. Add broth, cover loosely, and cook for about 10 minutes, turning occasionally. Stir in crème fraîche until it boils. Whisk in the sauce thickener and bring to a gentle boil again while stirring. Season with salt and pepper.
