Ingredients

  • 250 g chicken breast fillet (skinless)
  • 1 EL herbs (Provence)
  • 1 TL paprika powder (sweet)
  • 2 EL oil
  • 2 whole grain bagels
  • 1 EL red pesto (jar)
  • 200 g cucumber
  • 2 Tomatoes
  • 1 bundle arugula
  • Salt
  • pepper (ground)

Instructions

    Wash and pat dry the chicken. Mix herbs with paprika powder, oil, salt, and pepper. Rub onto the meat and cook in a not too hot pan on both sides for about 8 minutes until cooked through. Remove and let rest briefly.

    Cut bagels crosswise in half and spread pesto on each side.

    Wash cucumber and tomatoes; cut off tomato stems and slice both into rounds. Distribute over the four bagel halves and place the sliced chicken on top. Wash arugula, rinse, and shake dry. Sprinkle over the bagels and season with pepper before serving.
