Ingredients

  • 6 red beets
  • 200 g young spinach
  • 200 g feta cheese
  • 3 tbsp sprouted oil
  • 5 tbsp raspberry vinegar
  • 1 pinch Salt
  • pepper (white, freshly ground)
  • 1 tsp seasoned broth
  • 1 tsp lemon zest
  • 2 tbsp water
  • 2 tbsp chives

Instructions

    Wash the red beets thoroughly and cook in lightly salted water for about 40 minutes. Drain, let cool slightly, peel thinly, then cut into strips and place with vinegar in a bowl.

    Rinse the spinach well, pat dry, and shake off excess moisture. Tear the feta into small pieces.

    Mix the water with oil, broth, and lemon zest; add chives, salt, and pepper.

    Combine the spinach with the red beet strips and the dressing, arrange on plates, sprinkle feta over top, and serve immediately.
