Ingredients
- 1 head of lettuce
- 1 bunch spring onions (large)
- 1 yellow bell pepper
- 0.5 cucumber
- 4 tomatoes
- 8 anchovy fillets
- 100 g black olives
- 2 hard-boiled eggs
- 2 tbsp white wine vinegar
- 6 tbsp Olive oil
- salt and pepper to taste

Wash, dry, and tear lettuce into bite-sized pieces. Peel cucumber and slice thinly. Halve bell pepper, remove seeds, wash, and cut into fine strips. Trim spring onions, wash, cut ends off, slice green parts into thin rings, halve onion lengthwise.

Wash tomatoes and quarter them. Arrange all ingredients on plates. Rinse anchovies in cold water, place two with olives on the salad. Whisk vinegar, oil, salt, and pepper to make a dressing; drizzle over the salad. Quarter eggs, add to salad, and season with freshly ground pepper.
