Ingredients

  • 250 g mixed leafy greens (romaine, endive, Lollo Rosso, frisée, radicchio)
  • 1 Red Onion
  • 2 slices of toast bread
  • 50 g butter
  • 200 g Chicken breast fillet
  • 1 tbsp soy oil
  • 3 tbsp white balsamic vinegar
  • 3 tbsp olive oil
  • Salt
  • pepper (ground)
  • 0.5 tsp mustard
  • 1 pinch sugar
  • 1 Garlic clove

Instructions

    Wash, rinse, dry, and chop the greens into bite‑sized pieces. Peel the onion and slice into thin rings or dice as desired.

    Cut the toast bread into 2 cm cubes and roast them in butter with the garlic until golden yellow. Cut the chicken into bite‑sized pieces and sear in a grill pan with soy oil.

    Whisk together vinegar, olive oil, mustard, sugar, salt, and pepper to make a dressing; toss the greens with it. Distribute the roasted chicken and bread cubes over the salad and serve immediately.
