Salad with Avocado and Strawberries

This crunchy salad with avocado and strawberries from Spoonsparrow adds color to your plate.

Ingredients

  • 500 g strawberries
  • 2 ripe avocados
  • 100 g Lollo bionda (or lamb's lettuce)
  • 45 g roasted pistachios (3 tbsp)
  • 4 tbsp olive oil
  • 2 tbsp Orange juice
  • 1 tbsp white balsamic vinegar
  • 1 tsp Honey
  • Salt
  • Pepper
  • 4 sprigs Mint

Instructions

    Wash, hull, and chop the strawberries into pieces. Halve the avocados, remove the pits, scoop out the flesh with a spoon, and dice it. Add the strawberries to a bowl with the diced avocado.

    Wash, dry, and tear the lettuce into smaller pieces. Add the pistachios to the strawberries and avocados.

    In a bowl, mix together the oil, orange juice, vinegar, honey, salt, and pepper well. Wash, shake dry, and pluck the leaves from the mint. Arrange the salad with avocado and strawberries, sprinkle with mint, and serve with the dressing.
