Ingredients

  • 150 g rice noodles
  • 12 iceberg lettuce leaves
  • Salt
  • 400 g turkey breast fillet
  • 1 tbsp peanut oil
  • chili powder
  • 150 g pineapple flesh
  • 1 stalk mint
  • 1 handful coriander greens

Instructions

    Cook the noodles according to package instructions, then rinse briefly and drain well. Wash and clean the lettuce leaves, blanch them in salted water for no longer than 10 seconds, cool, and pat dry. Rinse the turkey, pat dry, and slice into strips. Fry in hot oil for 2-3 minutes until golden brown. Season with salt and chili, then remove from heat. Slice the pineapple into fine strips. Rinse the mint and coriander, shake dry, pluck, and chop. Combine the herbs with pineapple, turkey, and noodles loosely. Spread the lettuce leaves and place the mixture in the center. Fold the edges in and roll up.
