Ingredients

  • 125 ml white wine
  • 200 g fresh salmon fillet
  • 200 g smoked salmon
  • 1 tbsp Olive Oil
  • 2 tbsp cognac
  • Salt
  • pepper from the mill
  • 150 g crème fraîche
  • 1 bundle watercress
  • Salad cucumber
  • 1 bulb fennel
  • 1 Lime
  • Salt
  • Pepper
  • 3 tbsp olive oil

Instructions

    Boil white wine in a small pan. Poach salmon fillet for 3-4 minutes per side in the wine. Let it cool in the wine.

    Slice smoked salmon into strips. Heat oil in a pan and quickly sear the salmon strips until they turn light. Place both salmon types (with liquid) in a shallow bowl, drizzle with Cognac, and season with salt and pepper. Roughly break apart with a fork. Cover and refrigerate for 3.5 hours to marinate.

    Rinse and clean watercress, removing stems. Peel cucumber and slice into rounds. Clean fennel, rinse, and cut lengthwise into thin slices. Finely chop fennel fronds. Wash lime, grate its zest, and squeeze the juice. Mix lime juice with salt, pepper, and oil. Stir in fennel fronds. Marinate watercress, cucumber, and fennel with the vinaigrette.

    Fold crème fraîche into the salmon mixture. Arrange the salmon blend with watercress, cucumber, and fennel on plates.
