Saibling Fillets with Cucumber Salsa

Spoonsparrow offers this fresh root vegetable dish featuring saibling fillets and cucumber salsa.

Ingredients

  • 4 saibling fillets (200 g each)
  • 1 salad cucumber
  • 1 bundle radishes
  • 1 large onion
  • 2 tbsp butter
  • 4 sprigs dill
  • Salt
  • Pepper
  • 4 tbsp white balsamic vinegar
  • 6 tbsp keta caviar
  • 4 tbsp heavy cream

Instructions

    Wrap the saibling fillets tightly in plastic wrap, then in aluminum foil. Let them steep in 70°C hot water for 5 minutes.

    Halve the cucumber lengthwise, scrape out the seeds, and dice into small cubes. Wash, trim, and cube the radishes similarly. Peel and finely dice the onion. Sauté all vegetables in butter until softened. Chop dill finely and fold in. Season with salt, pepper, and white balsamic vinegar. Plate the mixture.

    Unwrap the saibling fillets, place them on top of the vegetable salad, and garnish with keta caviar and heavy cream before serving.
